From Simple Beginnings to Great Success

Wily Trout Vineyard and Poachers Pantry straddles the north east facing slopes of the granite hills that lie in the heart of the Murrumbateman and Canberra Wine Region. Our small family business was founded 25 years ago by Susan Bruce. It has been built around the love of good food and sharing with family and friends. From simple beginnings as an artisan smokehouse, we have grown to include the Wily Trout Vineyard, Smokehouse Restaurant, farm shop, cellar door, country wedding and event destination. The Wily Trout Vineyard is renowned for its soft, peppery shiraz and elegant aromatic white varieties and is now in the hands of the second generation, Will Bruce. Our products include sparkling pinot chardonnay, blanc de blanc, shiraz  and pinot noir. Our cellardoor wine list is exclusively the Wily Trout wines that are grown on the hills that surround the restaurant.

Our cellar door is located in the Smokehouse Restaurant which is all about the meats we cure. Come by and try a selection which can be matched to our artisan range of smoked meats. If you like, stay for a meal and enjoy the stunning combination of our wines, our smoked meats and our countryside – the complete regional food experience.

The Smokehouse Restaurant is all about the meats we cure and smoke and the wines that come from our vineyard that grow on the hills that surround the restaurant. We use organic ingredients from our own kitchen garden; the herbs and vegetables are picked fresh every morning and delivered straight to the kitchen. Our menu is constantly changing so that we can use local ingredients that are at their best.

The restaurant is located in its own grounds, and a table on the terrace or deck is simply perfect on a lovely day. The Kitchen Garden wicking beds supply fresh organic herbs and vegetables to the restaurant as well as a lovely location for that special long lunch.

We are one of the finest smokehouses in Australia with our products regularly winning medals at the Royal Fine Food Shows including trophies for the most highly scoring product in class. Our products are prepared using traditional hand-crafted techniques by a team dedicated to make exceptional quality products with craftsman-like care. We share your passion for quality ingredients so that you can make dishes that look wonderful and taste terrific.
